Oat & Apricot Biscuits

Ingredients

  • 125g butter, softened
  • 1⁄2 cup brown sugar
  • 1 egg, lightly whisked
  • 1 teaspoon vanilla extract
  • 1⁄2 cup wholemeal flour
  • 1 teaspoon baking powder
  • 2/3 cup KaneFibre
  • 1⁄2 cup rolled oats
  • 1⁄2 cup dried apricots, chopped
  • 1⁄4 cup pumpkin seeds

Method:

  1. Preheat oven to 180°C. Line a baking tray with baking paper
  2. Place the butter, sugar, egg and vanilla into a large bowl and beat with a wooden spoon until smooth
  3. Add the flour, baking powder and KaneFibre and stir through until just combined. Then stir through remaining ingredients
  4. Roll tablespoonfuls of mixture into balls and place on the prepared tray, then flatten slightly using the back of a fork
  5. Bake for 12-15 minutes or until lightly golden and cooked through
  6. Remove from oven and cool for 5 minutes before transferring to a wire rack
