Blueberry Pancakes

Prep Time: 10min Cooking Time: 10min Serves: 2

Ingredients:

  • 1⁄2 cup wholemeal flour
  • 1⁄2 cup plain flour
  • 2 teaspoons baking powder
  •  2 tablespoons KaneFibre
  • Pinch of salt
  • 1 egg, lightly beaten
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 1⁄2 cup fresh or frozen blueberries
  • 1 tablespoon butter

To serve:

  • 2 tablespoons Greek yoghurt
  • 1⁄4 cup fresh or frozen blueberries
  • 2 tablespoons maple syrup

Method:

  1. Mix flour, baking powder, KaneFibre and salt in a large bowl
  2. Make a well in the centre and pour in milk, egg and vanilla. Lightly whisk with a fork to combine before incorporating the flour. Mix well until smooth (use a whisk to remove lumps if necessary)
  3. Gently fold through blueberries
  4. Melt 1 teaspoon of the butter in a large frying pan over medium heat. Add 1/2 cup-fuls of pancake mixture and cook until bubbles form on the surface. Flip and cook for a further 30 seconds or until cooked through
  5. Serve topped with Greek yoghurt, berries and maple syrup
