Banana, Date & Walnut Loaf

Prep Time: 10min Cooking Time: 1 hour Serves: 8

Ingredients

  • 3 large, very ripe bananas
  • 3 eggs, lightly beaten
  • 1⁄2 cup extra virgin olive oil
  • 1⁄2 cup natural yoghurt
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 3⁄4 cup wholemeal flour, sifted
  • 3⁄4 cup plain flour, sifted
  • 2 teaspoons baking powder
  • 1⁄2 cup KaneFibre
  • Pinch of salt
  • 1⁄2 cup dates, roughly chopped
  • 1⁄2 cup walnuts, roughly chopped

Method:

  1. Preheat oven to 170°C. Grease a 22cm loaf tin and line with baking paper
  2. In a large bowl, mash bananas using a fork. Stir through eggs, oil, yoghurt, vanilla and cinnamon
  3. Gently fold through flour, baking powder, KaneFibre and salt until just combined. Then fold through dates and walnuts
  4. Spoon into prepared tin and bake for around 1 hour or until a skewer inserted into the middle comes out clean
  5. Stand for 5 minutes before transferring to a wire rack to cool
